Breakfast Tofu Scramble

Fancy trying something a little bit different for breakfast? Instead of scrambled eggs….how about scrambled tofu? You can pretty much put anything you like with your tofu, but here is just a suggestion –

Heat some coconut oil in a frying pan to melt, then add the chopped onions and stir for 1 minute. Add the tofu, herbs and spices and continue to turn to prevent sticking, breaking the tofu up as you go. Add the mushrooms, peppers, tomatoes, garlic and soy sauce or nutritional yeast. Keep mixing to coat the tofu and add chilli and black pepper, if desired.
Serve as is or on top of some toast.

Half a block of firm tofu
1 small red onion, chopped
4-6 mushrooms
4-6 cherry tomatoes (chopped)
Red, orange or yellow pepper (chopped roughly)
2 cloves of garlic, crushed then chopped
tbsp soy sauce or tsp of nutritional yeast
Thyme, smoked paprika and turmeric to taste
Chilli and black pepper to taste
